Cleaner is caustic and contains Sodium hydroxide, Sodium hypochlorite. These chemicals pose health risks to the operators and require TUR reporting from Cedar's. The CIP process also uses a large amount of energy and water which boosts the cost of CIPs.
To clean the food debris, clean allergens and sanitize sanitize of food related microorganisms in the tanks after use.
